Healthy Greek Salad Recipe!

Today we were going to a 4th of July Potluck – and I wanted to bring something that was relatively easy to make, flavorful but healthy also. I decided to make a Greek Salad – but put a few twists on the traditional Greek Salad to increase the nutritional value and decrease the fat content! Here’s my recipe below – hope you enjoy it!

Ingredients

  • 2 bags of mixed greens (Trader Joe’s has great variety in their organic mixed greens)
  • Red onion, diced
  • 1 Red Bell Pepper, cut into thin slices or diced (depending on what you prefer)
  • 1/2 English Cucumber, cut into thin slices and halved
  • 3-4 Roma Tomatoes, sliced and quartered
  • Sliced toasted almonds
  • 1/4 cup dried cranberries
  • Fat Free Feta Cheese Crumbles (I like the kind from Trader Joe’s – picture below)

For the Dressing

You have two options: I like to toss mine with just salt and pepper – it’s already pretty flavorful with the cheese, almonds, etc. But if you must have dressing – I like Trader Joe’s balsamic vinegar dressing (it has only 15 calories per serving!) But any low calorie (<30 calories per serving) dressing will do 🙂

Directions

In a large salad bowl, put the two bags of mixed greens in as a base for the salad. Top with the rest of the veggies (tomatoes, cucumbers, red pepper, red onion). Then top with the cheese, cranberries and almonds in that order. Serve and enjoy!

Note: Because of the fat free feta, and the small quantities of sliced almonds & cranberries – this salad remains quite low in calories and high in nutrition/fiber! (Just as long as you don’t put too much dressing on it! 🙂 )
